Yeast

We use three types of yeast depending on the kind of baked goods we make: Shirakami Kodama yeast, biwa (loquat) yeast, and our own homemade sourdough type liquid levain.

These are very delicate natural yeasts that produce baked goods that can be enjoyed safely and with peace of mind, and feature a sweet aroma and chewiness.
Wheat

We use carefully selected and safely processed wheat that mainly comes from Hokkaido and can be enjoyed with peace of mind.

Our freshly baked goods have a very distinctive sweetness and aroma.
Salt

We use Khanh Hoa salt that comes from Vietnam.

This salt features a slightly sweet flavor with a unique umami taste.
Eggs

We use eggs from chickens raised on safely prepared feed at the Seimei Farm located in Ranzan Town in Saitama Prefecture.

These high quality eggs are produced by chickens who are given a feed formulated in-house from carefully selected ingredients.
Sugar

We use safely processed raw sugar from Kikaijima island that is neither colored nor bleached with chemicals.

This sugar features an especially high mineral content.
Milk We use only non-homogenized whole milk produced to a select standard at a designated dairy farm in Hamanaka Town in Hokkaido.
Other ingredients We use organically grown vegetables and examine the feed given to the cows and pigs that provide the ham, Vienna sausage, butter and other ingredients that we use.
Sugar

We use safely processed raw sugar from Kikaijima island that is neither colored nor bleached with chemicals.

This sugar features an especially high mineral content.

This is our original mixed bread made by taking time to knead natural mugwort, lotus leaf and blueberries into the dough, creating three layers of these ingredients.

A rustic country style bread fermented with our own home-made biwa yeast.

It has a slightly sour flavor and is chewy on the inside.

Tangzhong-style raisin bread

Tangzhong-style raisin bread

We use a Tangzhong technique in which we cook a wheat flour roux using hot water to bake this moist and soft-and-springy bread that contains organic raisins from California.

Tangzhong-style white bread

Tangzhong-style white bread

This bread features a moist and springy dough made using our Tangzhong technique of cooking a flour roux using hot water.

This bread is moist when eaten as is, but when toasted, the crusts become crispy and the inside becomes chewier.

Our message to you

“Just as the saying goes, food is the source of life, and our bodies are nourished by what we eat.
That is why we believe it is important to eat natural foods made from additive-free ingredients as much as possible every day.”


With such strong beliefs and using organic vegetables and additive-free seasonings so that our customers can enjoy eating their food with peace of mind, in Daikanyama in 1993 we opened our “Bombay Bazar,” an organic cafe that features delicious ingredients that are carefully selected and very safely prepared. And then in 2008, also in Daikanyama, we opened “Lotus baguette,” a bakery using natural yeast, domestic Haruyutaka wheat flour and also rice flour.

Potassium bromate is a food additive that is approved for use as a flour processing agent in Japan.
It is used to efficiently produce a uniformly shaped bread, but it is also a genotoxic carcinogen.
Potassium bromate is banned in many countries throughout the world.
Here at Lotus baguette, we never use any flours that have been processed with this additive.


Together with our living natural yeasts, all of our staff work wholeheartedly every day to make our delicious breads that nourish the bodies of our valued customers.
We are happy that there are a lot of bakers now using natural yeast, but we sincerely hope that you will have a chance to try and enjoy our breads.
